Czech Recipes and Cookbooks
As you might expect, food in the Czech Republic,
has been very much influenced by the cuisine of the country's neighbors -
although of course there are many uniquely Czech foods too!
The main dish in most Czech meals is usually some variety of meat,
often pork, but also beef, chicken and wild game are also popular.
Being a landlocked country, fish does not generally form a major part of the
Czech diet. The exceptions are freshwater trout and carp, the latter of
which is traditionally eaten for
Christmas.
Here are some popular dishes from the Czech Republic:
- Knedliky - Knedliky are boiled dumplings made from potatoes, or a mix of wheat flour and stale/dry bread.
They are sliced before serving, and eaten as a side dish with many Czech meals.
- Bramboráky (also known as "cmunda", "voouch", "strik" or "striky") - These are fried pancakes made from grated potato.
- Smaený sýr - A thick slice of cheese, coated with bread crumbs and then deep-fried. It is eaten with tartar sauce ("tatarská omácka").
- Svícková na smetane - Roast beef covered with a thick cream sauce containing carrots and parsley. Traditionally eaten with dumplings ("knedliky"), and served with a slice of lemon and a teaspoon of cranberry compote.
LI>Utopenci - Pickled bratwurst.
- Veprová pecene s knedlíky a se zelím (also known as "Vepro-knedlo-zelo") - Roast pork with dumplings nedliky and cabbage. There are two varieties - one with just sauerkraut which is usually (but not always) eaten in Bohemia, and one with sugar sweetened cabbage (either fresh or sauerkraut) which is usually (but not always) eaten in Moravia.
Here are some popular Czech desserts:
- Koláce - A pastry roll filled with cheese or fruit.

- Ovocné knedlíky - Ovocné knedlíky are dumplings made with potato dough and containing fruit on the inside. Many different fruits may be used, but plum dumplings ("vestkové knedlíky") are popular during the Easter and Christmas holidays.
- Vánocka - This is a rich bread-like cake made using eggs and butter. It contains almonds and raisins, and is flavored with lemon rind and nutmeg. Vánocka is made by preparing braids of dough, and stacking them (with large braids at the bottom, and smaller braids at the top) before cooking. The cake is traditionally eaten during the Christmas period, and its design is said to resemble the infant Jesus in a manger.
- Vánocní cukroví - Decorated cookies, traditionally eaten at Christmas.
